Peel the beets and cut them into 3/4-inch cubes. Arrange the cubes in an even layer on the prepared baking sheet.

Drizzle the beets with the olive oil, balsamic vinegar, and honey. Sprinkle with the salt and black pepper. Use a rubber spatula to toss the beets until they are evenly coated.

Tips & Tricks (5)
- Choose the Right Beet Size 🎯Select beets of similar size (about 2-3 inches diameter) so they roast evenly and finish cooking at the same time, preventing some from drying out while others remain undercooked.
- Don't Peel Before Roasting 🧅Keep the skin intact during roasting to retain moisture and nutrients; the skin slips off easily after cooling, and this method prevents beet juice from oxidizing and losing its vibrant color.
- Add Balsamic in Two Stages 🍯Toss beets halfway through roasting with half the aged balsamic vinegar to caramelize, then add the remaining vinegar in the final 5 minutes to preserve its complex flavor and prevent bitterness from prolonged heat exposure.
- Reduce Balsamic for Deeper Flavor 🔥Simmer your aged balsamic vinegar in a small saucepan for 5-7 minutes before using to concentrate and intensify its sweetness, creating a glossy glaze that coats the beets beautifully.
- Enhance Cold Serving with Finishing Oil ✨When serving balsamic roasted beets cold, drizzle with premium extra-virgin olive oil just before serving to restore silkiness and prevent the dish from tasting dry, as roasted vegetables absorb oil during cooling.
