Banana Bread Cookies
Banana Bread Cookies are a classic treat that is moist, flavorful, and perfect for using up those overripe bananas. They’re healthy, gluten free and low calorie cookies that taste just like your favorite banana bread. I love this recipe because it’s a healthy, delicious cookie! Preheat oven to 350℉.
- Step 2
Line two cookie trays with parchment paper or silicone baking mats. Set aside.
- Step 3
In a large bowl stir together the almond flour, baking soda, salt and cinnamon.
- Step 4
Mash in the bananas until combined and no large chunks of banana remain.
- Step 5
Add maple syrup (or maybe syrup substitute) and eggs. Stir well until no dry streaks of almond flour remain.
- Step 6
Use a cookie scoop to portion out the dough 3 inches apart on the prepared baking mat.
- Step 7
Use the back of the cookie scoop to smooth down the banana cookie dough.
- Step 8
Bake for 25-28 minutes, or until lightly golden brown.
- Step 9
Allow to cool on the baking sheets for 2 minutes before attempting to remove to a cooling rack.
