Place cashews in a bowl and pour boiling water over them. Let them soak for 30 minutes.

Drain the cashews and place them in a blender along with water, nutritional yeast, soy sauce, honey, and chili. Squeeze the lime and add the juice to the other ingredients.

Blend all ingredients in a blender until you have a smooth, creamy, but liquid dressing. If the dressing is too thick, simply add a little more water

Taste the cashew dressing again before using and, if necessary, refine it with additional soy sauce (for more saltiness), lime juice or rice vinegar (for more acidity), honey (for more sweetness) or chipotle sauce/ sriracha (for more spiciness).
