My family loves these Cast Iron Skillet Breakfast Potatoes and Cheese. They will quickly become your favorite breakfast. Bacon, hash browns and veggies make a great casserole that’s perfect for a morning breakfast or for dinner. My hearty breakfast skillet recipe is easy, customizable and super quick. Eggs and potatoes are perfect even for the pickiest of eaters.

- Step 1
Preheat the oven to 375℉ and butter a baking dish.
- Step 2
Melt the butter in a large skillet and sauté the onions, peppers and garlic until browned.
- Step 3
Add the frozen hash browns, some salt and pepper and toss together.
- Step 4
Transfer to buttered baking dish and top with the cheese and bacon.
- Step 5
Bake in preheated oven for 30 minutes or until hot and bubbly.
