Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain the rest.

In a large skillet, heat butter and olive oil over medium heat. Add diced onion and cook for 2–3 minutes.

5
Add tomato paste and stir to coat the sausage evenly.
6
Pour in 1 cup of heavy cream and bring to a gentle simmer. Then add remaining 1/2 cup of heavy cream.
7
Season again to taste with the same spices. Stir in Parmesan, Asiago, and mozzarella until melted.

Tips & Tricks (5)
- Brown the Sausage Properly 🍖Break the sausage into small, uniform pieces and let them sear undisturbed for 2-3 minutes before stirring to develop deep caramelization and rich flavor that anchors the entire sauce.
- Use Pasta Water as Liquid Gold 💧Reserve at least 1 cup of starchy pasta water before draining, then use it to loosen the sauce and create a silky emulsion that clings perfectly to each strand of pasta.
- Bloom the Tomato Paste 🍅Cook tomato paste in the fat for 2-3 minutes before adding cream to deepen its umami complexity and eliminate any tinny taste, creating a more sophisticated sauce base.
- Add Burrata at the Last Second 🧀Place burrata cheese on warm pasta only seconds before serving so it melts slightly from residual heat while maintaining its creamy, delicate texture rather than becoming a puddle.
- Layer Your Cheeses Strategically 🧈Mix shredded mozzarella and Asiago into the warm sauce off-heat while stirring constantly, then finish with Parmesan and burrata on the plate to build complex flavors and prevent any cheese from becoming grainy.
