Instructions
1
Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, garlic powder, paprika, and salt. Roast for 20–25 minutes until golden and crispy, flipping halfway.
2
In a skillet over medium heat, add olive oil and optional butter. Sauté minced garlic for 30 seconds, then add ground beef.
3
Cook until browned, then stir in soy sauce, Worcestershire, smoked paprika, onion powder, garlic powder, salt, and pepper.
4
Simmer for 2–3 minutes to absorb flavor, then remove from heat.
5
In a bowl, whisk together Greek yogurt, light mayo, lemon juice, garlic powder, dill, green onions, and salt for the herb drizzle.
6
To assemble, divide roasted potatoes and beef mixture into bowls. Drizzle with the creamy herb sauce.
7
Top with green onions and Parmesan if desired. Serve warm.

Tips & Tricks (5)
- Crisp Your Potatoes First 🥔Cut potatoes into uniform 3/4-inch cubes and par-cook them for 5 minutes before roasting to ensure golden, crispy exteriors while maintaining creamy centers that won't overcook.
- Bloom Your Garlic in Butter 🧈Toast minced garlic in melted butter for 30-45 seconds before adding the ground beef to unlock deeper, more complex garlic flavors and prevent burnt, bitter notes.
- Greek Yogurt Sauce Temperature Trick 🌡️Add your Greek yogurt herb drizzle just before serving and keep the bowl warm but not piping hot—high heat causes yogurt to separate and lose its creamy texture.
- Soy-Worcestershire Balance ⚖️Add soy sauce and Worcestershire in stages, tasting between additions—their sodium levels vary by brand, preventing an overly salty final dish that's hard to correct.
- Brown Ground Beef Without Crowding 🔥Break the lean ground beef into small, pea-sized crumbles and work in batches if needed—overcrowding the pan steams the meat instead of creating flavorful, caramelized bits.
