High-Protein Turkey Stuffed Sweet Potatoes
Instructions

Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and bake directly on the oven rack for 40–45 minutes until tender.

While sweet potatoes cook, heat olive oil in a skillet over medium heat.

Add diced onion and red bell pepper; sauté until soft, then stir in garlic and cook 1–2 more minutes.

Add ground turkey and cook until browned and cooked through.

Stir in chicken broth, tomato paste, smoked paprika, chili powder, cumin, salt, and pepper. Simmer for 5–7 minutes until thickened.

Slice open each baked sweet potato and gently mash the insides.
