Jennifer Aniston Salad
Jennifer Aniston Salad is a filling salad made famous by the Friends star. Aside from being a viral sensation, this salad is packed with healthy ingredients for a light lunch that Ross and Rachel would approve of. With fresh herbs, healthy fats, and quinoa or bulgur wheat, this is the perfect salad for a light and energizing lunch.

- Step 1
Rinse quinoa well under cool water.
- Step 2
Add prepared quinoa and water to a small saucepan and bring to a boil. Reduce to simmering, and cook for 15 minutes. Place lid on top and allow to sit off the heat for 5 minutes.
- Step 3
Remove from heat; fluff quinoa with a fork and set aside while you make the rest of the salad.
- Step 4
In a medium bowl, stir together chickpeas, cucumber, red onion, feta cheese, parsley, mint and pistachios.
- Step 5
Gently fold in the prepared quinoa.
- Step 6
In a small bowl, whisk together the olive oil, lemon juice, and all-purpose seasoning until combined.
- Step 7
Pour dressing over salad and gently toss until completely combined.
- Step 8
Serve immediately or store in an airtight container in the refrigerator for up to three days.
