Lemon Cream Shrimp Pasta
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
2
Season shrimp with paprika, salt, black pepper, garlic powder, and onion powder. Drizzle with olive oil and mix well.
3
In a pan over medium heat, melt butter with a dash of olive oil. Add shrimp and cook about 2 minutes per side until pink and opaque. Remove and set aside.
4
In the same pan, add minced garlic and sauté until fragrant. Deglaze with a splash of white wine.
5
Add heavy cream and stir. Season again with the same spices used on the shrimp.
6
Bring to a gentle simmer, then add cooked pasta and a splash of pasta water.
7
Return shrimp to the pan and stir in Parmesan and red pepper flakes.
8
Add lemon juice if desired for added brightness. Toss until well combined, adding pasta water as needed to loosen the sauce.
9
Serve hot topped with more Parmesan and a pinch of red pepper flakes.

Tips & Tricks (5)
- Don't Overcook the Shrimp 🦐Remove shrimp from heat the moment they turn opaque and curl slightly (about 2-3 minutes per side), as they continue cooking from residual heat and become rubbery if overdone.
- Reserve Pasta Water First 💧Before draining pasta, scoop out 1 cup of starchy pasta water to use as a sauce thickener and emulsifier—this creates a silkier, more cohesive cream sauce that clings beautifully to the noodles.
- Bloom Your Spices in Fat 🧈Toast the garlic powder, onion powder, and paprika in the warm butter and oil before adding wet ingredients to unlock their full aromatic potential and prevent a raw, powdery taste.
- Finish with Cold Butter for Shine ✨Whisk a tablespoon of cold butter into the finished sauce off-heat to create a glossy, restaurant-quality finish that enhances flavor and mouthfeel.
- Balance Lemon Juice Gradually 🍋Add lemon juice in small increments at the very end, tasting as you go, since heat intensifies acidity and you can always add more but cannot remove it once overdone.
