One-Pot Creamy Lasagna Soup
All the cozy flavors of classic lasagna, but easier, creamier, and made in one single pot! This soup combines rich tomato broth, tender lasagna noodles, creamy cheese, and perfectly seasoned ground beef. It’s the ultimate comfort food that tastes like a warm hug in a bowl.

- Step 1
In a large pot, heat a drizzle of oil over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and ground beef, cooking until browned.
- Step 2
Stir in the tomato paste and cook for 1 minute to enhance the flavor. Add tomato puree, all seasonings, and broth. Stir well and bring to a simmer.
- Step 3
Break the lasagna sheets into smaller pieces and add them directly into the pot. Simmer for about 10–12 minutes until the noodles are tender. Stir occasionally so they don’t stick.
- Step 4
Lower the heat and stir in the cream cheese, heavy cream, and mozzarella. Mix until melted and creamy. Taste and adjust seasoning if needed.
- Step 5
Ladle the soup into bowls, sprinkle with a bit more mozzarella or basil on top, and enjoy warm.
