1/2
Sausage and Cheese Egg Casserole
Instructions
1
Preheat the oven to 350° F.
2
Spray a 9x13-inch baking dish with nonstick cooking spray.
3
Place two paper towels on a large plate, and set aside.
4
Set a large skillet over medium-high heat. Place the sausage in the skillet. Cook until browned, 5-7 minutes, using a rubber spatula to break up the sausage into small pieces as it cooks.
5
Transfer the sausage to the paper-towel lined plate to drain.
6
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Add the sausage and shredded cheese. Fold with a rubber spatula to evenly distribute the sausage and cheese.
7
Pour the mixture into the prepared baking dish.
8
Bake the casserole on middle rack of oven until it is golden-brown and a toothpick inserted in the center comes out clean, 40-45 minutes.
9
Check to see that casserole is done. Remove from oven or add time as needed.
10
Allow casserole to cool for at least 10 minutes. Cut the casserole into squares, or simply spoon onto plates. Serve.

Tips & Tricks (5)
- Brown Sausage Thoroughly First 🍳Cook the breakfast sausage completely and drain excess fat before adding to the casserole to prevent a greasy final dish and ensure even flavor distribution throughout.
- Whisk Eggs with Milk Properly 🥛Whisk eggs and milk together for at least 1-2 minutes until fully combined and slightly frothy, which creates a creamier, more custard-like texture in the baked casserole.
- Use Day-Old Bread for Structure 🍞If adding bread, use day-old or lightly toasted pieces that absorb the egg mixture evenly without becoming mushy, preventing a soggy casserole.
- Don't Overbake—Test with a Knife 🔪Insert a knife near the center at 45 minutes; if it comes out clean with just a few moist crumbs, it's done—overbaking causes rubbery eggs and uneven texture.
- Let It Rest Before Serving ⏱️Allow the casserole to rest for 5-10 minutes after baking so the custard sets properly, making it easier to cut into clean portions and improving the overall texture.
