Instructions
1
Cut the tempeh into thin slices, approximately 0.5 centimeters thick.
2
In a casserole dish or similar container, combine paprika, smoked salt, cayenne pepper, cornstarch, tomato paste, soy sauce, rice vinegar, rapeseed oil, and agave syrup until smooth. Add the tempeh slices to the marinade and gently stir with a spatula to ensure they are evenly coated.
3
Preheat the air fryer to 190°C for about 3 to 4 minutes. Arrange the tempeh bacon slices side by side in the air fryer basket and cook for 8 to 9 minutes at 190°C until the edges are crispy. Turn the tempeh over halfway through cooking.
4
Meanwhile, toast the bread. Wash the tomato, slice it, and sprinkle the slices with a little salt. Spread mayonnaise and ketchup on the bread slices. Top with arugula, tomatoes, and tempeh, then fold the sandwich over with a second slice of bread.

Tips & Tricks (5)
- Press and Marinate for Maximum Flavor 🧂Press your tempeh block between paper towels with a weight for 15 minutes before slicing to remove excess moisture, then marinate the slices for at least 2 hours so the smoked salt and soy sauce penetrate deeply for authentic bacon-like flavor.
- Cornstarch Coating Creates Crispy Edges ✨Dust your marinated tempeh slices lightly with cornstarch before pan-frying—this creates a delightfully crispy, caramelized exterior while keeping the interior tender and absorbing the smoky marinade flavors.
- Toast Your Bread for Structural Integrity 🍞Lightly toast your sandwich bread to prevent sogginess from the marinade and condiments while adding a subtle crunch that complements the crispy tempeh perfectly.
- Balance Your Mayo-Ketchup Ratio 🎯Mix your mayo and ketchup with a pinch of smoked paprika and cayenne on the side before spreading to create a cohesive smoky sauce that ties all flavors together instead of using them separately.
- Layer Strategically for Flavor & Texture 🏗️Place the warm crispy tempeh directly on the sauce-spread bread, then layer tomato and arugula on top—this prevents the greens from wilting while allowing warm tempeh flavors to infuse into the bread.
